Apple Cider Donuts

Serves 20-24
Total Time: 15 minutes

Ingredients:

  • 2 cups all-purpose flour
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • Pinch nutmeg
  • Pinch salt
  • ¾ cup apple cider
  • 2 eggs, beaten lightly
  • 3 tbsp. oil
  • 1 tsp. vanilla

For topping:

  • ⅔ cup cinnamon sugar
  • 4 tbsp. melted butter

Directions:

  1. Preheat oven to 325ºF. Grease a donut hole pan or mini-mu n pan with cooking spray and set aside.
  2. In large bowl, whisk together our, sugars, baking powder, cinnamon, nutmeg and salt. Stir in apple cider, beaten eggs, oil and vanilla and gently mix to combine. Do not overmix.
  3. Scoop portion batter evenly among the donut hole pan. Bake for 8-10 minutes until donuts feel light and fluffy. Cool in pan for 5 minutes, then ip onto a wire rack.
  4. Brush tops and bottoms of the donuts with melted butter using a pastry brush, then cover the donuts in cinnamon sugar mixture. Serve immediately, or store airtight for up to 2 days.

Warm Apple Cider

Ingredients:

  • 2 quarts 100% apple juice
  • ½ cup brown sugar
  • 1 apple (unpeeled)
  • 1 orange (unpeeled)
  • 2 tsp. whole cloves
  • 1-2 cinnamon sticks
  • ½ tsp. nutmeg

Directions:

  1. Cut apple in half.
  2. Insert the whole cloves into all sides of the apple.
  3. Heat apple juice over medium heat in a pot.
  4. Once heated, add brown sugar.
  5. Stir until brown sugar completely dissolves.
  6. Add remaining ingredients. Let ingredients simmer for 20 minutes.
  7. Remove apple halves, orange, cinnamon sticks, and any cloves that may still be in the pot.
  8. Serve hot.
